As a southerner, this is hysterical! You folks really believe some restaurant in New York City or DC or California has better fried chicken than you can find in the south? And the one place you do name in the south is Hattie B’s (a chain not even close to the best)? Thanks for the chuckle. I’ll be laughing about this one all day.
You got it! People ought to try Mama B’s in NC, or some of the Quaker places, or Hursey’s, etc.
Crunch of the skin, not overbreaded, breading seasoned correctly and meat maybe even injected. Cajuns know how to do this, and they really know how to cook Cachon du Lait (piglets milk soaked and radiant cooked— whole festival down in LA. In Mansura, LA 100k people come!)
Granted this is NOT fried chicken. It IS mo bettah! Acadians.
