My very 1st Mexican food was in Albuquerque as we moved there when I was 12.

10 years later, I got married and moved to Phoenix.

That’s when I discovered all Mexican food is NOT the same.

Similar flavors but definitely NOT the same.

Have never had TexMex which would be another similar but not the same from what I understand.

Just like American food varies by locality, so does
Mexican food.

TexMex is just regular food around here.

Your are correct!
Tex Mex is an American version of great Mexican foods.Living in Texas all my life having many friends of Mexican descent, food culturally is quite different from the Tex Mex style we adjusted to.
Still true Mexican food is wonderful,but prefer the Texas twist on it. :) I love all foods..from various backgrounds.Thanks to my family that is diverse I can cook Mexican,Tacos,Tamales to Brisket,Gumbo and Sausages with Sauerkraut,to the best Meatballs or lasagna old school! ha! The only thing I cannot or try to cook, is wild meat! I leave that to my uncles and Step-Dad! Ugh! I come from a family of Great Cooks.
