Ingredients
2 cups dried split peas, (≈1 pound), sorted and rinsedSteps
6½ cups liquid (water or chicken broth)
¾ cup chopped large onion, about 1 large onion
¾ cup finely chopped celery, about 2 medium stalks
1 tsp salt
¼ teaspoon pepper
1¼ cups carrots, cut into 1/4-inch slices, or julienned, about 3 medium carrots
1 ham bone or 2 lbs shanks or 2 lbs smoked pork hocks
1. Clean and soak peas overnight in plain water, drain and rinse.Expert Tips
2. Add 6½ cups liquid (water or chicken broth).
3. Cover and cook on Low heat setting 3 hours.
4. Use an immersion blender to coarsely break up the peas.
5. Add all ingredients except ham in slow cooker. Add meat on top.
6. Cover and cook on Low heat setting 5 to 7 hours.
7. Remove meat from cooker; place on cutting board. Pull meat from bones, using 2 forks; discard bones and skin. Stir shredded meat into soup. Stir well before serving.
• Preparing split peas for cooking is easy! Just pick over the dried split peas and discard any grit or discolored peas. Place the split peas in a bowl, and cover them with water. After a minute or two, remove any skins or split peas that float to the top. Finally, rinse the split peas in a colander. For peas that have been stored for years, soak overnight, drain and rinse before use.
• If desired, spice with 2 cloves minced garlic, ⅓ tsp dried thyme, ⅓ tsp crushed dried rosemary before cooking.
• Serve a grainy cornbread (don’t forget the honey butter or drizzle of maple syrup) and a spinach salad with fresh grapefruit or mandarin segments with the soup. The tart freshness of the citrus contrasts nicely with the rich, thick soup.
• We like ours with a lot of black pepper on the top and a splash or two of Tabasco!

Something I’ve been doing for the last couple of years is adding chopped spinach to all of my soups, stews and some pasta dishes. I buy a packing of frozen chopped spinach and it’s just so handy to throw a good chunk into everything - it has a nice appearance of added green (the pcs. are small) and it doesn’t alter the flavor at all. Oh, and it’s good for you, too. It looks particularly nice in Curry & Coconut Shrimp Fettucine....and Chicken Tortellini Soup.
I can’t open my Haagen Dasz ice cream yet - but I made an artichoke parmasaen cheese dip so I’ll pull out a few crackers, have some of that, and go directly to ice-cream at about Trump o’clock.

The recipe sounds good, and is pretty much the same as what I do - plus the added chopped spinach. We’ll have a nice ham bone after Thanksgiving (Oct 10th up here), so I suspect a pot of pea soup coming soon.
Ha! I’ve been in the baking mood lately as well. I’ve got some fresh Paula Red apples, and I have a few requests for pies, so I’ll be whipping those up this week. I made a batch of beef stew with dumplings the other day. My problem is that I make too much, then I get a little sick of it by the time it’s done. I just find it almost impossible to make small pots of stew or soup. Once you add all of the delicious ingredients you want, presto, big pot!
I love DeSantis. In my dream world, we would have him for four more years as Florida Governor (Does FL have term limits?) and then follow Trump’s second term for 8 years in the White House. DeSantis gets things done that are good for ordinary people.
