I can scarcely believe I was able to post that picture. I’ve had such trouble getting the verbiage and punctuation right so the photo posts at all and in a nice size. Here’s the recipe:
SPICY PEROGIE PIZZA
Makes 1 15” pizza pizza.
Ingredients:
½ bag of prepared pizza dough
8 ounces full-fat sour cream
½ teaspoon cayenne pepper
1 pouch real bacon bits or 12 slices of cooked bacon, crumbled
3-4 cups shredded mozzarella cheese
1-2 cups shredded old cheddar cheese, preferably orange, for contrast
2 large or 3 medium russet potatoes
¾ cup pickled jalapeno pepper slices, drained and cut into smaller pieces
2 bunches of green onions, cleaned and sliced
Prepare pizza dough by putting it in a slightly greased glass bowl, covered with plastic wrap or a clean dish towel. Let it rise in a warm place for 2-3 hours. About ½ hour before dough is ready, add about ½ teaspoon cayenne pepper to sour cream. Mix very well and set aside. Adjust to taste.
Peel potatoes and cut into 1/16” slices. Place slices in a single layer on as many plates as you need and cover each with plastic wrap. Cook the potatoes for 2-3 minutes on high in the microwave and set aside. Russet potatoes are best because they have a low moisture content and hold their shape when cooked. Repeat until all potatoes are cooked. Don’t overcook.
Preheat oven to 500 degrees. Stretch out pizza dough into desired shape. Bake for 6 minutes until the crust begins to firm up and until it’s no more than very light brown. Remove the crust from the oven and turn the oven down to 450 degrees.
Spread a ¼” thick layer of the cayenne sour cream on top of the lightly cooked pizza crust. Evenly spread all the drained/chopped pickled jalapenos, bacon bits and ¼ of the sliced green onions. Place cooked sliced potatoes evenly on the pizza in a single layer, then add the shredded cheddar and mozzarella cheeses. It’s okay to slightly overlap the potatoes.
Bake at 450 degrees for 9-10 minutes or until golden brown on top and bottom. Cool for 10 minutes. If you cut the pizza too soon, the sour cream will still be too hot and and it will run off the pizza. After 10 minutes, sprinkle the remaining green onions over the top. Put a dollop of plain or spicy sour cream in the centre of the pizza or serve on the side for dipping.
