What about zuccnini? I tried freezing some slices and they were horrible, had to throw out. I only grow the Italian romanescu kind that are ridged.

Have you tried slicing and freezing them on a cookie sheet, then bagging them? I do this, and before sauteing them later allow them to thaw out and pour off the water (they’re mostly water). They’re not bad that way though not quite the same as fresh. Works with yellow squash too. Seems a shame to not take advantage of their abundance.

I did it exactly that way. For some reason they were horrible, the freezer bags seemed to impart a horrible taste. Tossed out a lot of zuke and yellow squash slices.
