Hunt very well. When I put them in cakes or sweet breads, it doesn’t get the lift that real eggs give it. If I try to use it as a binder, like in meatballs or meatloaf, the meat still falls apart somewhat, although it does work better than when I use them in baking.
Whatever you are doing to dehydrate them might be better though, just like those egg crystals might be better. It definitely is worth experimenting with!
