We looked at a house in Tenn that had the walls and ceiling all completely covered in panneling - not junky panelling but that and all wood floorings was just too much for me, and we passed on it.

Youd never haveta paint such a house though.

Yeah, I love wood panelling, or a wood floor and one wall, or a ceiling and wall. You need contrast. IMHO, of course.

I miss having a paneled wall. Maybe I should do so with my house.

It can certainly be over done! Note that that old fashioned paneling is incredibly flammable. The interior of the mobile home is covered in it but it’s all been painted. Each room gets completely gutted then re-insulated, vapor barriered, and drywalled. The ceiling in the 2nd bedroom is drywall like the walls so each bedroom room is different.

Next up is the flooring in both bedrooms then bathroom will be completely gutted and redone. Literally everything is moving and being replaced, toilet, shower and sink. Two friends of mine are good plumbers and they works cheap. ;)
