It’s an odd idea since it implies that the virus is responding to an external factor and that’s not exactly modern genetics. It’s Lamarckian.
Covid is an RNA virus. RNA viruses lack an error checking mechanism that a DNA virus would have, so they make transcription errors all of time, entirely on their own. It’s what they do. Most don’t help the virus survive.
