I have baked pies ahead of time and frozen them. They freeze just fine. Bake them, then freeze them, then just thaw them out at room temp, and if you want them warm, just pop them in the oven for 20 minutes.
I was surprised that even pecan pies freeze well. And pumpkin. I think that’s all I’ve tried.
