Worked with big datacenters before, there’s this thing called a “tape backup”

Most companies run redundant servers that they can start up with little notice. That way they rarely have to go back to the last tape backup which may be up to 24 hours old.

If your company is subject to federal and international oversight you back up your server each evening to an outside server. This is needed in case of a recall, lot traceability, etc. So yes you are right.
