One would think they’d have backups and the ability to restore to some point in the recent past. Even I can do that, several ways.
...unless I’m missing something.

Everything would be backed up, probably more than once. Any company of any size has plans for recovery from catastrophic events.

Worked with big datacenters before, there’s this thing called a “tape backup”, and they’re taken at regular intervals. Not to mention that the code running ON the servers is probably present in a “source code repository” somewhere else. So, if ONE gets deleted, it exists in the other. (And on tape).
