My guess is that excessiive bacteria in the mouth degrade the blood-brain barrier and allow damaging beta protein to slip into the brain, with trans and saturated fats facilitating the transport.

Has to be a strong genetic factor also. My mother in law died of Alzheimers. My wife has moderate dementia. The first symptoms appeared at about the same age they did for her mother. Her brother is a few years younger and is experiencing early symptoms.
My wife always ate healthy and never weighed more than 105 lbs in the 57 years we have been together.
Long-term Framingham study and others have shown just the opposite. The old saturated fat causes heaet disease theory is not borne out by data.
