we never used fatback for beans, we always used a ham bone. I learned as a student you can get a slab of fatback and a pound of beans and eat like a king for like 1.50

What a slide.
I make some darn good beans using smoked ham hocks. I serve them with fried taters and withered lettuce (shredded green leaf lettuce, green onions, withered with fresh bacon grease and topped with crumbled freshly fried bacon, salted perfectly.
My last meal would not be a finely cooked rare steak..itβd be beans, withered lettuce and taters made my way.π

Husband’s mommaw made that, but he calls it wilted lettuce. Yummy!
My granny cooked up a pot of beans with butter and a few strips of bacon. Top ‘em off with some chopped onion, salt, and pepper with a side of cornbread and I’m ready to eat!!
