About shots & samples; add the question: what about convalescent plasma?

If the tests could not distinguish between covid and flu, then:

How would medics know whether the person had previously had covid or flu, when that person showed up to donate their plasma to help sick folks recover?

How would medics know whether the sick person to be treated with the plasma had covid or flu?

It didn't matter, both were viral even if one of them is purely hypothetical. Now what happens when flu had therapies, but instead we got shots for it that didn't always work? Doesn't play well with a public with their heads out
