I have a question for anybody on here that cans. I picked up some canning peaches today, and I much prefer to pressure can because the canner ends up much lighter. But when I pressure canned some pears they turned in icky weird color. Which is apparently normal with pears. So I want to see if that would happen with peaches? If so I’ll deal with the weight of the water.

I went to our local Mennonite store, they had a big truck from Pennsylvania bringing in apples and peaches. So I got a bushel of apples and a bushel of canning peaches. And a half bushel of clingfree eating peaches. Time to get to work!
