Well, I’ve learned a lot by looking for the answer for you. I figured it had something to do with the wood shrinking or expanding and then you end up with gaps. But here’s a lot more specific information, I just copied it off the web without footnotes or references.
“Acclimation is a process that allows your hardwood flooring to adjust to the conditions of your living space. When acclimation is complete, the temperature and humidity of the hardwood will suit the temperature and humidity of the surrounding environment.”
“Acclimation describes the process of conditioning hardwood floor planks, so their moisture content is at the optimal level for the environment it is to be installed. For most wood flooring, the wood floor must be within 4% of the moisture content of your subfloor.”
“Failure to properly acclimate hardwood flooring before installation begins may compromise the integrity of your floor. Not acclimating hardwood floors can cause excessive gaps, warping, buckling or cupping after the installation is complete; the expansion joint may also be compromised, which will result in further damage.”

Well we wouldn’t want to make the national wood flooring Association mad. It makes sense to me about the subfloor, that’s probably the most important part that they be similar.
