A man named Joe "Cocky Joe" Lorenza, an employee of Pat's, is credited with being the first person to add provolone cheese to the cheesesteak sandwich.
So "Cocky Joe" invented it, cuz provolone is da bomb, and prior to Whiz and 'Merican cheese there was none.

Recipe calls for ribeye. I uses sliced sandwich cold cuts. Not as good. I figure everyone would be eating rubens right now with the leftover corned beef. Shrivels up too much for leftovers.

While on a road trip with the fam to the east coast, on the list of things to do in Philly was visit Valley Forge, tour the Mint, Liberty Bell, and Independence Hall, and eat at Geno’s and Pat’s King of Steaks.
When you get up to the window, order it like a boss.
“Cheese wit”; cheesesteak with onions.
“Cheese wit out”; cheesesteak without onions.

Spent the rest of his life trying to find a decent Philly Cheesesteak.
Went to his grave never having accomplished that goal..
