New Mexico restaurant perfecting a new ketchup recipe

A New Mexico restaurant is trying its hand at making a new ketchup recipe specifically for hot dogs. At Year of the Dog in Raton, a lot of their homemade sauces and toppings are from scratch so making a new ketchup seemed like a no-brainer.

Mahasin and Naemon Thurman own the gourmet hot dog restaurant. It started as a street cart in Trinidad, Colorado but in 2020 they opened up a walk-up restaurant. The Thurman’s believe ketchup gets a bad rap and wanted to see if they can give the condiment a makeover.

Their new ketchup is a bit thicker and darker than regular ketchup and is made to spice up a regular hot dog and mature your taste buds. “Kids love ketchup, so it’s like taking their nostalgic condiment and allowing them to still be adults about putting ketchup on everything that kids like,” said Naemon.

The hot dog ketchup and all of their other sauces will be available at the restaurant and for sale once they have the recipe perfected and packaging ready to go. They want to launch in the community first, so they are hoping to bring the ketchup to either the Santa Fe Farmers’ Market or to the Albuquerque metro. The goal is to eventually ship nationwide.

Mahasin is also in the running for a favorite chef contest online, if she wins they plan on using the prize money to help package and produce the new ketchup as well as their other menu items.

This has already been done in the restaurant "Texas Hot" (click here) in Wellsville, Allegany County, New York since 1920; and they have sold millions of Dietz & Watson hot dogs with this sauce. There is no better. A lifetime of trying to find something better would be a waste. The recipe has been a family trade secret, like tHat of the original Coca-Cola.

TEXAS HOTS

But many have tried. Here is one, with comments:

They need to create a new condiment for hot dogs, basically a ketchup that tastes like mustard.

3 parts ketchup to one part Sriracha sauce is how we roll but never on a hot dog.

Here’s a little something I came up with a while ago...

Take some commercial Cajun spice mix. Add a goodly portion of ground Cayenne pepper to taste. Pour a big glop of Catsup or two and add several shakes of Tabasco or other hot sauce. Mix in the dry ingredients. Um-mm good.

Tastes great on eggs BTW.

I’ll never put ketchup on a hot dog in a bun (mustard and onion only), but for some reason ketchup is right for a fried-hot-dog sandwich. I can’t figure out why.

Mustard on hot dogs. Never ketchup. I think I have bought one bottle in over 70 years!

You might as well put mustard on french fries.

In Germany, they serve mayonnaise with pommes frites. It's not that bad, though I prefer ketchup.

I do that when I eat in an Army mess hall. I think the scrambled eggs and omelets are pasteurized and the fresh eggs have to be fried hard or hard boiled. You can’t get over easy, etc. because of the concern over salmonella. The eggs just don’t taste the best. Ketchup is what I use if they don’t have good hot sauce.

I’ve tried mayo on fries. Not terrible but ketchup definitely goes better. With a splash of Tabasco.
