Not so fast there.

If there is one fish that is singular, if there are more than one fish, all of the same species, they are still fish, plural. BUT, if there is more than one fish and they are of different species they are fishes.

Is there some weird rule for a gaggle of geese of different kinds?

No, plural of goose is geese. Like plural of mouse is mice.
