i had to look up Cowboy Pork Chops. New name for cut of porkchops for me. After going through all the recipes and information, I came to conclusion it is just a thicker cut. Funny how pork chops in the family packs (lg) have nice looking REGULAR looking chops on the top but into the packet a lot of irregularity, fat streams etc.
I had only noted thick porkchops in past years the were sliced/pocket inserted and a stuffing of some sort inside.
The articles I read indicated that thick pork chops were superior in taste as they didn’t dry out.
My expeience in doing the fry/sear method is that the meat was tough/dry. I make them in crock pot and the come out really moist, tender & flavorful ... vary the seasons depending on your meal theme. I do fruit now and then - oranges or apples.. Sometimes a mexican slant.
My mom used to make delicious ones. She did the triple breading method and pan fried. Then put inroaster pan in oven. Dont know time or temp. I was never much interested in kitchen things growing up. But I knew I enjoyed her cooking. And hey when you are 9-early teens you simply aren’t wired to think.. oh I better learn to do this as Ill eventually be in charge with no help. Im pretty convinced the mom must make the iniative to teach the boys and girls in family. I think growing up my mom was working in a very small, crowded kitchen. A second person was in the way. She always had huge meaals and so was very busy and behind schedule more often than not.
Not too often would a teaching momement be available
My boys were more interested in learning to cook than my girls.
