There’s also a version around here (but I’ve seen it at other locations) called a country Benedict. You change everything but the egg.
Split a buttermilk biscuit, put sausage patty on each one, add the poached egg, then smother in sausage gravy.
Sausage gravy, now that sounds like the southern version!
That sounds good except for the egg. I can’t eat runny yolk because my dad had around 80 chickens.
