Hi Spirit!

Reubens are the BEST sandwiches ever. Gee, I haven’t had a good Reuben in a long time. I think I’ll go on the hunt for somewhere around here that will do a take-out Reuben.

I just made a big pot of turkey soup with rice last night. I am going to be eating that for days, and I’m kind of sick of it already because I had just roasted the turkey and eaten some of that.

I guess the Reuben will have to wait until all of this turkey slop is gone.

ROFL that’s bad that you just made it and are sick of it. Maybe freeze some of it?

I’m a creature of habit. When I go to a restaurant with a Reuben, that’s what I get (second choice is a patty melt). If it’s Chinese, it’s beef and broccoli.

I’m trying to use up stuff that’s just hanging around in the cabinets and freezer. I have some leftover dried lentils I’m going to turn into soup, if I can just find the recipe for it again; it called for just the right amount for my leftovers. But some other things lingering around might be thrown in as well...

Turkey Reubens are good.

1 cup sauerkraut, drained
10 ounces sliced deli turkey meat
2 tablespoons butter
4 slices marble rye bread
4 slices Swiss cheese
4 tablespoons thousand island salad dressing, or to taste

Warm the sauerkraut and turkey, separately, in a microwave-safe bowls for 30-seconds; set aside. Spread butter generously on one side of each slice of rye bread, then spread the thousand island dressing on the other side. Divide the sauerkraut, turkey, and Swiss cheese on two slice of bread with the butter-side down. Stack the remaining two slices of bread with the butter-side up on top.

Step 2
Heat a large skillet over medium-low heat. Arrange the sandwiches on the skillet and grill until lightly browned and the cheese is melted, about 3 minutes on each side
