funny you should mention sauerkraut...my dtr made me some and its fermenting right now....btw, I drink sauerkraut juice too....
White vinegar is chemically produced, natural apple cider vinegar is fermented. Be careful some disreputable sellers apple flavor white vinegar.
When in Israel I made my own apple cider vinegar by using some Braggs as starter for apple juice.
Dill pickle juice frozen pops!!

Was just reading Poland by James Michener, and he was describing one of the uneducated peasant women in a village and saying that she always made and ate the sauerkraut and drank the juice because she always knew it was very very good for her and had to do with the tremendously old ages some of the villagers lived to.
