Winnowing is an ancient process of separating the grains from chaff (ie. the shell) by using the wind.
When wheat was harvested, it would be collected together and crushed in a process called threshing.
Threshing breaks and loosens the shell that surrounds the grain. This could be done by walking animals over the harvest, or by pounding the harvest with a threshing tool.
In the photo, the man is using a fork to toss the threshed harvest into the air, where the wind would blow away the chaff.
This process, called winnowing, allows the heavier grain to separate from its shell and fall back down, where it can be easily collected.
After winnowing, the collected pile of grains would be filtered to remove any remaining chaff that was not winnowed away.
This could be done by submerging the grain pile in water or by sifting through the pile with a grated pan.
