I've read somewhere that millions of buffalo were killed and the only thing taken was the hide and their tongues..

My grandmother used to make pickled heart and tongue. It was good stuff. She also made a point of not letting the marrow go to waste. It’s all good. Waste not, want not.

No matter what your favorite cut is, you might want to think about getting your fill now. If they get the GND through congress, your beef eating days will be over.

Both very good. Every eat tacos de lengua? They're my favorite. Oh, and lengua is beef tongue. It justs sounds better in Spanish.

My guess is if “I” cooked marrow or tongue, it would taste like marrow and tongue. These guys are super-duper chefs and they have years of experience making all of this stuff taste good.

I will not be firing up the grill for tongue tonight. I guess I could flail around and get a decent sirloin done.

I have never eaten marrow outright. I make broth with marrow and connective tissue.

Actually tongue is very good! simply boil it to remove the outer skin and slice the meat. No fat!

I ear both. I get frozen marrow bones from the boutique grocery store and they are CHEAP. They roast well and have great flavor. It took a couple of glasses of wine the first time, but I tried tongue and could get over how good it was. The problem for me is that it is a huge cut of meat and I cook for one. It’s almost impossible to find in a restaurant or enough friends to serve it at a dinner party.
