Good chorizo is really good, not like you’re describing. Crappy chorizo is exactly right.
I make my own now—freshly ground pork/beef/chicken thighs, spices and vinegar. Let it marinate overnight and cook with onions and diced potatoes for breakfast.
The stuff they sell in grocery stores is crap
