Milk is separated into curds and whey, solid and liquid. The curds are used to make real cheese. Then the whey is boiled, and you get another solid — mozzarella/string cheese. Finally, the liquid that is left is mixed with vegetable oil and emulsifiers, and called “American cheese”.

It’s not cheese.
