I didn’t make the soup - I did pass along the soup recipe when there was an interest in cold weather soups.
What I made was a very easy version of cabbage rolls - it was delicious (just like the real thing!) and fast.
All you do is make your cabbage roll stuffing as normal in a big bowl. Then you chop a whole cabbage. Put some olive oil in the bottom of your normal roasting pan. Spread out half of the chopped cabbage in the pan. Then spread out all of the stuffing mix. Spread the rest of the chopped cabbage on top. Pour tomato juice over the whole thing - 1 can at least, I used a bit more. Put the lid on and bake for a few hours as you would cabbage rolls. You may have to add more juice (or some water) part way through if it gets too dry.
My stuffing mix is ground beef, some ground pork, uncooked rice, onions, celery, shredded carrots, crushed garlic, salt & pepper. Whatever you normally like in cabbage rolls.
This made me a giant bowl which I have been eating for 3 days now - I don’t get sick of it because I LOVE cabbage rolls. Cabbage rolls LOOK much nicer lol, but this tasted the same.
