Yes; it’s also in mollusk radulae (serves as both tongue and teeth), octopus/squid/cuttlefish beaks, even fish scales.

Yup, and chitin/chitosan is used in brewing beer/wine as a flocculation agent. (It helps remove the solids still in suspension.)
