I dont know about universities. But I was an urban public school teacher for many years. Please permit me to make a few points.
1) In the old days (before around the year 2000) we were permitted to choose our own textbooks, and our own curricula. A committee would meet that would choose those things. Those committees were fairly balanced. I was on many of them. We usually picked traditional course material.
Those days are gone. Now we are forced to teach things that are literally insane. This new material is forced upon us by educational consultants hired by the school board. Very few teachers like the new stuff. But if you deviate from the curriculum, you can - and will - be fired for not being loyal. Yes, they use that word.
So what do teachers do? We try to minimize the bad stuff, and sneak in the good stuff.
2) Yes, teacher unions are very liberal. But that only applies to the leadership. The rank-and-file pretty much represent a cross-section of the country. So how does the liberal leadership stay in power? I could tell you stories that would make Stalin blush.
Bottom line, the unions have poisoned the pot, not unlike the leaders of various other institutions, FBI for example, that also promote leftism.
