Things spring, I'll try harvesting and cook some, then eat them with salt and butter like boiled spinach.

Oh sheesh, I have a ton of that too. My chickens won’t touch it for some reason.

Blanche them about ten minutes and prepare as you say.

As a kid, we had a large field adjacent to our house with an endless supply of wild mustard in the spring. We went out and filled grocery bags full, and that was our only leafy green for at least a month. Dandelion greens are a lot more work, but you can gather enough for a few servings pretty easily if they are abundant in your area.

Thanks for that. I tend to spray those and kill em off. I have a garden with lettuce so all is good on the lettuce front.
