That process seems really strange.
Why not just have everything go out via the drive-thru?
I think that’s how most are doing food pick up/delivery.

Because they are worried about liability for walk-up customers trying to go through the drive-thru. That’s why many/most restaurants here are keeping a part of the lobby open for take out, plus accommodating customers who prefer the counter.
