Freeze dried is actually superior to dehydrating. Soak in room temperature water, pat dry and refrigerate. Instant salad.

Freeze dry has an exceptional shelf life. A bit expensive, but no need to rotate. They sell home freeze dry units. Those are a bit expensive. We're are looking at them now.
