One I used to take to pot lucks was a seafood: lobster. Shrimp. Scallops. Onions. Combo of Gouda n mozzarella cheese
The breakfast one ham/bacon/sausage. One or all
Mexican w fajita, pepper jack cheese n chorizo n taco spice
Italian with pepperoni. Mozzarella cheese n sun dried tomatoes. Of course generous Italian spices including fennel
Last night we had crustless. Doing it that way all the time now. I rarely ate crust n it was just habit to have it
Crustless quiche we had Thursday PM . Easy and we like it. My modified recipe. Prepare glass 9-10 inch pie pan with PAM, butter & Panko. sauté fresh sweet onions, spinach, colored peppers that have been seasoned with S & P and garlic power.(maybe about a full cup before cooking) Let cool Mix well together in another bowl 4 extra large or jumbo eggs. I cup whipping cream. 1 cup half/half. Fold in freshly grated 8 oz swiss cheese. Fold in cooled veggies. Pour into prepared dish. On my half kalamata olives. On my friends half shrimp & asparagus tips. sprinkle about 2 oz finely shredded mozzarella cheese. bake 350 for 45 - 60 minutes depending on your oven and how you like it. Clean knife test is what I do.
Let is set for 15 minutes to set the custard/ We had it with crisp Romane n avocado salad

I never thought of the Italian one, I do have pepperoni and mozzarella and sun-dried tomatoes, so that might be the way to go! Thanks for the tip on how to do it crustless. That will be a lot healthier.
The sounds really strange but my favorite quiche is made with cabbage. Cabbage and bacon or maybe sausage. Somehow the combination of the cooked cabbage and the quiche ingredients go really well together, although it sounds like they shouldn’t.
