Which part of canada? I’m from Vancouver originally and only a very FEW outlets I know of use the real ingredients and recipe. Even downtown Montreal, most of the shops there use the fake stuff. You have to be outside of the city limits like Quebec City to really taste this stuff..

I travel a lot in Southern Ontario/Toronto but also Montreal area.

Most of the poutine in Southern Ontario is the “fake stuff,” on the order of how hockey rinks or amusement parks in the USA do nachos

A friend took me to a gastropub in Montreal where the chef made his gravy from roast beef and bone-stock reduction, and of course the curds were from some local organic farm, etc... I remember it being near McGill. Will search the name...
