“50 cases” and that isn’t enough.

My, you are going to do some serious canning.

I want your address so I know where to go when the “crunch” comes.


That’s only 600 jar’s which is what you need at minimum for for a family of 4 for 1 year of fruits, vegetables and tomatoes. I use to do 1,000 - 1,200 for my family of 6 in addition to our potatoes, squash, onions and garlic that would winter over for use.

Used to help mom can when we lived where things grew, always had lots of veggies and fruit that we grew or bought.

Since moving to NM and AZ not much canning was done.

But we never put up what you are used to doing.

How did you process the squash? Every resource I had warned against trying to can it because the consistency didn’t lend itself to safe preservation because of the difficulty in controlling pH.
