I would have guessed that he was charged for taking the eggs because they had no proof that he killed the dead goose.

Dont get caught doing that without a permit. Each egg would be a separate count. And the right way to do it is shake all the eggs vigorously then replace them in the nest. The geese will try to hatch them but also not lay anymore.
Once again, make sure you have ALL the legally required permits or you could find yourself in serious legal jeopardy.
