Don’t laugh. Beaver is good eating. The tail is greasy but the body is good tender meat. Muskrat is better, like a tender squirrel. Possum is greasy and foul tasting all the way through.
Meat quality is normally tied to the diet of the animal. Beaver and muskrat are vegans where the possum is mostly a meat eater.
Remember this if you decide to turn cannibal and pick only vegans to eat.
