It was, I’m pretty surprised at all he did was just a minimum of complaining. I have made only two things in the last 4 months, one was pork tacos and one was the soup. He said it was all much better than anything else we have been eating. He’s not one for compliments so that meant a lot.

Your version is the official recipe. It’s a lot like what Olive Garden serves. But I follow my mother’s recipe which is completely unauthentic. But it’s what I grew up with so it’s my comfort food. She actually used pinto beans. And no tomatoes, just ham broth. I sauteed onions, carrots, and celery, then just dump in all the rest. I like to put in some time or margarine for flavor, okay those were supposed to be herbs. I cook the pasta separate cuz otherwise it gets soggy in the leftovers. I think he liked it because he asked where I got the broth. His Compliments are always roundabout, although I guess it could have meant he hated it. But I had some canned stock from boiling some ham bones when my arms felt better and I think that makes a big difference.

It’s a weird version that I would never serve to company. It doesn’t seem anything like Italian! It’s funny the first time I had real pasta fagioli at a restaurant, I was wondering what was wrong with it. It never occurred to me that my mother’s version was off.

Bet your mom’s version was the best.

I’m making my mom’s version of Goulash tonight but no Hungarian would probably recognize it, pretty bland.

This is something I remember she would make as the seasons got colder, that and oven Macaroni and Cheese.

My dad was a meat and potatoes kind of guy but he would eat these 2 dishes, he hated casseroles or Mexican food, really spicy food.
