Dont you think the pectinprice increases are subtle increases due to canning season? I mean horses hooves arent in short supply are they?
You’re thinking of glue. Pectin is made from certain fruits like green apples. You can make your own. Takes a long time. I remember Granny making pectin from windfall apples she got from the local orchardman. Then she made jam with it. She used sure gel, too; mostly in the later years.
Pectin has gone up at least 3 in the last 10 or more years. It’s made from apple peels mostly, no gelatin in it.
