They’re brilliantly trolling you humorless SEC fans. I’d say they’re the one team who “gets it”.
Also, I did not go to a D-I school, and I do root for teams in the B1G, ACC, PAC-12, Big-12, and the SEC, so I consider myself somewhat impartial to all of this. The fact that I don't find it funny is because I don't think it is right for someone to take $$$ for a contract, and then dishonor the contract, even in jest.
Besides, UCF's action do not look like trolling, but they actually believe they are the national champs:
