So forgive my ignorance: I thought cheddar was an english process...
I noticed they have an alpine cheddar...not sure how that works....

Cheese is a huge mystery to me: milk rennet or acid and time...yet so many different tastes....

You raise an interesting topic about appellation and cheddar.

*Vermont* is another brand altogether.

This article references the prosecution of a maple syrup company violating the *made in Vermont* label. I know the guy who did this. He bought a commodity of syrup in Rhode Island, bottled it, and sold it a *Vermont Maple syrup*. Turns out the syrup was cane sugar. Guy spent ten years in Federal prison. They/VT take these things *SERIOUSLY*.
