Mop out the grease with paper towels and then wash with soapy water and a dish cloth.

How do you clean it after cooking with it??

I scrub mine with a nylon brush using very hot tap water. Then I dry it completely, and if a burner is still warm, put it back on the burner to make sure it gets completely dry. (Hint, use an older, dark towel for drying instead of a nice new white one). Then I put in a some drops of oil (usually canola since that is what is beside the stove most times) and wipe it well with a paper towel. By that time the paper towel should be oily, and I use that on the handle and bottom.

If they rust (don't use one in the back of the cabinet for several years in a wet climate, and it will likely happen), remove the rust with a wire brush, steel wool or other abrasive and lots of rubbing, then season it like it is a new pan.

hot water and a scratcher....a good cast iron PAN will clean up easily...

Don’t use soap. Cast iron is too porous and any soap residue will taint your food (don’t use soap on Teflon either for 5 he same reason). Hot hot water then heat it up, grease it up, and cure it. YouTube has all the tips you will ever need for curing. Keep it in the oven when preheating and keep it lightly oiled.

I stopped using it years ago because I don’t have time for the fuss of it all, but I do keep a Dutch oven around for camping or backyard cooking.

Wipe it out with damp rag. Before putting it away heat it and wipe it with a little oil. If food gets stuck in it put water in it, simmer the water until the food gets loose...use a spatula while it is simmering to get all the food loose. The more seasoned it is the easier to clean. If I have one that wants to stick I use it for bacon for a while.
