Uh, no. AI can use statistics and probability. For example Bayesian Neural Networks use probability-based synapses.

You might want to read about The Dark Secret at the Heart of AI.

The AI may or not be using "statistics and probability" as commonly understood. But the "programming team" is in the dark as to that question. Now that deep learning works for significant problems, the challenge is to figure out how it works.
