The point is not the “intent” of the words. It is the ability to make something “real” out of a bunch of letters. It is trying to find patterns where none exist.
The Moby dick example is merely using another text for the process. And the result is akin to the “room full of monkeys” typing Shakespeare.
Sure if one can take any old text, like a phone book and get the same results.
