I have a little device (no clue where it came from) that pierces a hole in the top of the egg shell with a needle before you boil it. That along with rinsing with cold water works well.

I did an internet search and could not find it--looks like a small cup with a needle sticking up. Here's a pic of someone using a tack to do the same thing:

I’ve seen candle holders that match that description. Google the phrase “spike candle holder”.
