Around 1994 I killed a medium sized boar near my parents home.
Mother and Daddy grew up on farms and were both expert butchers. The meat was really pretty especially the bacon.
Unfortunately it had a gamey taste. Not so bad you couldn’t eat it but almost that bad.
What can one do to take the gamey taste out of wild game?
Our general rule is that if it is over 150 pounds it might as well be sausaged. A few herbs can take care of the taste.
The really big boars sometimes are just not worth trying to tote back, dress, and eat. Better to get two smaller ones IMHO.
