I’d surmise that meat from dairy type cows, especially if old and being retired from the dairy “industry,” mostly end up in ground meat, i.e., hamburger of low grade, and processed meats such as bologna, stuffed into casings for slicing and making sandwiches.
A former Oscar Mayer sausage department laborer, mostly late night cleaner-upper, 10 p.m to 6 ayem.

Yup. Average retirement age for dairy cow is 5 years. And then there are the bulls which by pass any milking requirements and go to beef directly when ready.
