I have never had chives on a lobster roll so it is not Maine style. No lobster roll ever had enough mayo for my mother. She loved to get hers at Susan’s on Forest Avenue or Two Lights in Cape Elizabeth just down the street from Portland Headlight (which is really is in Cape Elizabeth).
