The Hummos I buy (when I’m too lazy to make my own) is made by an Israeli Company (Sabra.)
The person who first introduced me to this dish was not Arab by a long shot - he was Armenian. And it’s a regular part of the Armenian menu at an old Chicago restaurant, Sayat Nova, where it is served with raw lamb Kibbe.
Safe to say I would be eating Kibbe and Hummos without the help of any Moslem invaders.
Sabra is my fave.
Back when we had a Bonanza here, 80% of my salad bar salad was chickpeas.
